Robert Cohen, founder of the Dairy Education Board, suggests that we feed our children rainbows.

Why?

The inner essence of white light is the rainbow and the rainbow contains the colors of the best  fruits and vegetables.

Feed your family foods of color for wellness.

When scientists at the University of Minnesota categorized different groups of fruits and vegetables by their disease-fighting properties, they defined colors by the phytochemicals contained within those pigments.

Start with the color green found in the middle of our rainbow.   Green leafy vegetables contain flavonoids.  Green fruits and vegetables contain phenols, plant sterols, protease inhibitors and saponins. Inositol is found in beans.

The violets and blues of the plant kingdom include phenols and dithiolthiolnines contained in eggplant, cruciferous vegetables, grapes, plums, and grains.

Yellow limonines contained in citrus fruit and
squash have also been identified as cancer fighters. Ditto the orange carotines in carrots and cantaloupe.

The rainbow of fruits and vegetables would not be complete without the red phenols in peppers, radishes, watermelon, and tomatoes.
