This colorful black bean salad is fast, quick, easy, healthy, and nutritious with nutrients incorporated into a vegan or vegetarian recipe containing no meat, eggs, and dairy. Health on the go! Healthy, varied diets, not vitamin pills, mean healthy nutrition.

Pat's Colorful Black Bean Salad Recipe, Richardson, TX, US.

Recipe
2 cups corn kernels, cooked

1 red onion, diced
1 red pepper, diced
1 cup chopped fresh cilantro

2 can black beans, rinsed and drained
1 tsp chili powder or to taste.

2 T olive oil
1/4 tsp. garlic powder
1/2 tsp. salt
2 T balsamic vinegar
2 T lemon juice, fresh if possible

Freshly ground black pepper.

Start corn cooking. When done, drain and cool.

While corn cooks, dice onion and bell pepper, then chop cilantro.

Add black beans and chili powder.

In separate bowl, add olive oil, garlic, salt, balsamic vinegar, lemon juice . Mix.

Add corn to bean mixture, pour over dressing, toss and top with freshly ground black pepper to taste.

 

In one minute more than the time it takes the corn to cook, this can be on the way to your dinner table. Serve with salsa and pita bread or corn tortillas for a finishing touch.
