Doritos's Recipe for Chili Beans

Don't let the number of ingredients scare you. This is as easy as opening cans; it's quick; it feeds 6 people.

Recipe
12 oz package frozen chopped onions, about 2.5 cups
10 oz package frozen chopped bell peppers, about 1.5 cups
1 15 ounce can vegetable broth
1/8 tsp. garlic powder

1 T chili powder
1 tsp. Italian seasoning
1 can diced tomatoes with chilies
1 15 oz diced tomatoes

1 15 oz can great northern white beans
1 15 oz can black beans
1 15 oz can pinto beans or black eye peas

Pour vegetable broth in Dutch oven. Add onions and peppers. That's right, add the entire packages. Simmer for ten minutes, stirring occasionally.

Add remaining ingredients and bring to a boil. Cover and simmer for another ten minutes.

Serve additional chili powder on the side. This is mild.

The hardest work here is opening the cans.

 

If you need more iron in your diet, add black eye peas rather than pinto beans.
