Ruth's Eggless "Egg" Salad or Sandwich Spread. Recipe Bedford, TX
| 2 cups firm tofu, pressed dry 1
cup vegetables such as cooked carrots, broccoli, or kale. Optional: 1 to 2 T pickle relish Salt and pepper to taste |
Press tofu as dry as possible. Crumble into mixing
bowl. Add cooked vegetables. Mash all. Mix in mustard, rice, and spices. Mix in raw vegetables and optional pickle relish. Correct seasonings.

Use as sandwich spread, as salad, and to stuff tomatoes or mushrooms.
Tip: Use a variety of vegetables for health and taste.
