Cooking with Flaxseed

SEED

Flaxseed can be purchased from health food stores. It is quite inexpensive. All flaxseed should be ground before using. A common coffee grinder is sufficient. As with most seeds, they have a pleasant smell and a nutty flavor. Discard if flaxseeds smell like linseed oil.

OIL
Buy oil in dark, refrigerated containers. Keep refrigerated and use by expiration date. Smell before using as rancid flaxseed oil is toxic. Cooking or even directly heating flaxseed oil destroys the Omega-3 fatty acids.

Recipes
Lettuce Roll

Remove the spine from a large leaf of romaine lettuce. Grind your daily portion of flaxseed. Sprinkle on ½ romaine leaf. Roll up, fold, and enjoy with any meal.

Avocado Dressing

1/3 cup ground flaxseeds
1 ripe avocado
1/2 cup lemon juice
1/8 tsp garlic powder
1 tsp of ginger powder

Blend all ingredients until smooth. Serve over salad or steamed vegetables, dress a baked potato, and use as dipping sauce.

Breakfast

2 T freshly ground flaxseed
2 T raw or toasted wheat germ
1 cup soy or rice milk, heated or cold
Maple syrup or honey to taste

Mix together, then allow to sit for a few minutes before eating.

Nut/Seed Spread/Pesto

2 T Brazil nuts
2 T walnuts
2 T pumpkin seeds
2 T sunflower seeds
2/3 cup flaxseed oil
1/8 tsp garlic powder
Juice of medium lemon
1 tsp dulse powder (optional)
1 2/3 cup fresh cilantro
Bragg Liquid Aminos to taste.

Chop cilantro in blender. Add the garlic, nuts and seeds, flaxseed oil, dulse and lemon juice. Mix until blended into paste. Season to taste with Bragg’s. Store in tightly covered, dark glass containers in refrigerator for up to one week. Use as a spread for crackers or pita, top soups and pastas, or use on baked potatoes. Blend with small amount of water, spoon over baked tofu or tempeh. Blend with enough water to make salad dressing.

Ground flaxseeds are tasty sprinkled on oatmeal, other cereals, salad, or steamed vegetables….. Get in the habit.
