Recipe Potato Salad/Hash
Part Hash/Part Salad

| 1.5 pounds potatoes, peeled and cubed 1 T olive oil 2 bell peppers, cubed (two colors are nice) 1 clove garlic, minced 3 diced tomatoes or equivalent |
Steam potatoes for 8 minutes. Saute potatoes in olive oil until brown. Stir constantly. Add garlic and bell peppers; cook for 3 minutes more, stirring constantly. Stir in tomatoes, mushrooms, and all seasonings. Cook for 5 more minutes. |
Serve hot or cold. Vegetarian Worchestershire sauce is available from health food stores. Serves 4 to 5.
