| 4 carrots, cut in rounds 2 cans vegetable broth 1 10 oz frozen spinach 2 cups corn kernels 1 T corn starch Salt to taste |
Prepare carrots and place in large pan.
Add canned vegetable broth reserving 1/2 cup for dissolving corn starch.. Add spinach, onions, barley, bulghur wheat, pepper. Cook until carrots are tender. Add corn. Cook until corn is done. Dissolve corn starch in vegetable broth. Add this with canned tomatoes and simmer until broth is thick. Add salt if needed. |
I guess the hardest thing about this dish is peeling and cutting the carrots. Serve with robust bread for a perfectly healthy, but quick and tasty, family meal.
