CyberParents' Vegetable and Barley or Rice Casserole Recipe

Recipe
2/3 cup vegetable broth

1/2 cup frozen corn

1/2 cup frozen broccoli (or green veggie your family prefers)

2 T diced onions (can be frozen or equivalent dried)

1/8 tsp. garlic

1/8 tsp. pepper

1 T wheat germ

Optional Salt to taste

EITHER
1/3 cup barley and 1 cup water

OR
1 cup cooked brown rice.

Mix all except wheat germ in microwave-safe dish.

Microwave  5 minutes, turn and microwave 5 more minutes for rice OR 10 more minutes for barley.

Sprinkle wheat germ over casserole to add nutty crunch right before serving.

 

Salt to taste

Some broth is very salty and this recipe rarely needs additional salt. Taste and add salt right before serving.

Barley vs. Rice

Either is good but barley might have a nutritional edge. If your family is not used to seeing barley on the table yet, you can use rice.

Suitable main dish with bread. Can also be served as a side dish.

This can be made ahead and reheated in the microwave for about 5 minutes.   Again, reserve wheat germ to sprinkle over top right before serving.
