David's Chocolate Chip Cookies with oatmeal and raisins, Dallas, TX, US.
| 1.5 cups unbleached flour 1 cup sugar of your choice 1 tsp. cinnamon 3/4 tsp. baking soda 1/2 tsp. salt 1/2 cup canola oil 1/2 cup applesauce 1/2 banana 1/4 cup soy or oat "milk" 3/4 cup raisins 3/4 cup vegan chocolate chips .75 cups old-fashioned oatmeal, uncooked |
Preheat oven to 350 degrees. Mix dry ingredients (flour, sugar, salt, cinnamon, baking soda, oat bran) together in a large bowl. Sift if desired. Mix liquids (canola oil, applesauce, "milk") together until blended. Pour liquids into flour mixture and blend well. Mix oatmeal, raisins, chocolate chips together then add to flour-liquid mixture. Stir until no dry parts remain. Spoon batter by flattened tablespoon onto greased cookie sheet. Leave about 1/2 inch between cookies. Bake 10 to 12 minutes. Tops and bottoms will be slightly browned.

This is a crunchy cookie with no eggs or milk. Banana replaces the eggs to make this a vegan vegetarian recipe.
This was my grandmother's recipe. She used white flour, eggs, butter, and cow's milk. I have made them as healthy as possible while still retaining their crunchy goodness.
My grandmother also added 1/3 cup pecans. You can add pecans or walnuts--even peanuts: 1/4 cup to 1/3 cup, if you wish. I have added the nuts from time-to-time.
And... Granny sifted; I don't.
The cookie freezes well so I store them in the freezer in a ziplock bag. She had an old-fashioned cookie jar full of childrens' hands everytime her back was turned. Perhaps her back was turned purposely. Dough does not keep in refrigerator, unfortunately.
