Kristi's Oil-Free Banana Vinaigrette Salad Recipe Dallas, TX

Recipe
Optional: 1 cup baked tofu cubes

1 medium banana, ripe
1/2 cup water
2 T apple cider vinegar
1 T sweetener of your choice
1 T herb seasoning (Ms Dash is good)
1/4 tsp salt

3 cups mixed greens or cabbage

 

Fresh cracked pepper

 

Optional: Cut tofu into small bite-size pieces. Spread in single layer on cookie sheet. Sprinkle with salt, pepper, and herb seasonings. Bake at 300 degrees until slightly browned, stirring once to turn.

Layer all ingredients except tofu, greens and pepper in blender in order given. Blend on high about one minute until smooth. Refrigerate for at least one hour before using.

Pour over greens (or cabbage) and optional tofu, then toss.

Top with fresh cracked black pepper.
