Carrie's Healthy Pastry.

1/2 tsp. salt

2.25 cups of unbleached all-purpose flour.

1/2 cup canola oil.

1/3 cup soy milk, chilled.

Mix dry ingredients with fork, add oil to milk and add to dry mixture together, mixing with fork until just blended.

Separate into two balls, flatten slightly, and handle gently at all times to avoid making the pastry tough

Roll out each ball between two sheets of floured wax paper. Turn from time-to-time and smooth wrinkles from bottom or paper. Peel off the top paper and fit the dough, dough side down, into pan. Remove top sheet.

Though not quite as flaky as its French cousin, this pastry recipe is healthy. It makes enough for a double-crust pie. If using for juicy pies, bake on the bottom shelf of the oven at temperature of pie recipe. However, if using unfilled, bake in top of oven at 400 degrees. Vegan vegetarian recipe.
